Short answer: in most of Europe, it's the default.

The Short Answer & Deep Dive

The UK default is ketchup or vinegar. But cross the channel, and mayo is king. Belgian frites with mayo is one of the greatest food combinations in human history.

The creaminess of mayo complements the crispy, salty potato in a way that ketchup's acidity doesn't. It's a texture and flavour pairing that works on a fundamental level.

If you dip your chips in mayo in the UK, someone will have an opinion. If you do it in Amsterdam, you're blending in. Context is everything.
